Ingredients
- 2 pomfret fish
- 1 tablespoon olive oil
- 1 tablespoon butter unsalted
- 1/2 lemon
- salt to taste
- black pepper to taste
Instructions
- Place a cast iron skillet over medium-high heat until hot, for about 3 minutes.
- In the meantime, wash the fish and pat it dry with paper towels. Make sure it’s completely dry.
- Place the fish on the cutting board. Use a sharp knife to cut through the flesh at a 45-degree angle, done to the bone. Score about 1.5 inches apart.
- Season the fish with salt and pepper to taste.
- Once the skillet is hot, add oil and butter. Once melted, add the fish. Cook for about 3-4 minutes until the bottom side has turned golden brown.
