Easy Potato Skins Recipe (So Crispy)

These Easy Potato Skins achieve crispiness by baking medium potatoes whole, then scooping out the insides, filling the skins with crispy bacon and shredded cheese, and baking again. Topped with fresh scallions and sour cream, they deliver a satisfying contrast of crispy edges and creamy toppings, suitable as a snack or appetizer.

Description

The recipe starts with baking eight medium potatoes at 400°F until cooked through, about an hour. The insides are gently removed to create hollow skins which can be saved for other uses like mashed potatoes or gnocchi. Meanwhile, scallions are diced and bacon is cut and fried until crispy.

Each potato skin is filled with a combination of crispy bacon and shredded Cheddar Jack or Mozzarella cheese, then baked again briefly to melt the cheese and crisp the edges further. After baking, the skins are garnished with scallions and a dollop of sour cream, adding freshness and creaminess.

The result is a crispy, savory potato skin with a mix of textures from the crunchy bacon, melted cheese, and creamy topping. This preparation works well for parties or as a comforting snack.
