Easy Prime Rib Recipe

This Easy Prime Rib Recipe shows how to roast a 10-pound prime rib with a flavorful garlic, olive oil, and herb rub. The method includes resting the roast at room temperature before roasting it first at a high heat to sear, then roasting at a lower temperature for even cooking. The result is a prime rib with a crusty exterior and tender, juicy interior that can be adjusted to preferred doneness using internal temperature guidelines. Proper resting after roasting helps the juices redistribute for a moist roast.

Description

Easy Prime Rib Recipe involves seasoning a large prime rib roast with a seasoned garlic, olive oil, thyme, salt, and pepper mixture spread on the fatty surface. Bringing the roast to room temperature before cooking helps it roast more evenly. The initial high-temperature roasting sears the outside, creating a crust, then the temperature is lowered to finish cooking. Roasting times and internal temperature targets guide achieving rare, medium, or medium-well doneness. Resting the roast tented in foil after cooking allows the internal temperature to rise slightly and juices to settle, preserving moisture and flavor. This roast is suited for carving and serving at festive meals or special occasions where a classic beef centerpiece is desired.

Ingredients

Servings
  • 1 (10-pound) prime rib roast
  • 10 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 teaspoons thyme dried

Instructions

  1. Place the roast in a large roasting pan with the fatty side up.
  2. In a small bowl, mix the minced garlic, olive oil, salt, pepper, and thyme. Spread the mixture over the fatty layer of the roast.
  3. Allow the roast to rest on the counter for 1–2 hours until it comes to room temperature.
  4. When ready to roast the prime rib, preheat your oven to 450–500°F.
  5. Cook prime rib for 15–20 minutes to sear, then reduce the oven temperature to 325°F. Continue to roast until the internal temperature reaches 5–10 degrees less than your desired internal temperature, depending on the desired doneness (see Recipe Tips).
  6. Loosely tent aluminum foil over the roast and allow it to rest for 10 minutes before carving and serving. The internal temperature will continue to rise while resting, leaving you with a perfectly cooked prime rib roast.

Notes

  • Use a meat thermometer to check internal temperature for desired doneness: 120-125°F for rare, 140-145°F for medium, 150°F for medium well.
  • Roast approximately 10-12 minutes per pound for rare, 13-14 minutes for medium, and 14-15 minutes for medium well.
  • Rest the roast loosely covered with foil for 10 minutes before carving to allow juices to redistribute.
