Ingredients

  • 3 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1 1/2 cups milk
  • 1 cup pumpkin puree canned
  • 4 egg separated
  • 1/4 cup butter melted

Instructions

  1. Sift together dry ingredients.
  2. Combine milk, egg yolks, butter, and pumpkin puree.
  3. Stir into dry ingredients until just blended. Beat egg whites until stiff and fold into batter until no whites remain.
  4. Pour onto a hot, greased griddle or skillet.
