Easy Refrigerator Pickles

Easy Refrigerator Pickles uses fresh cucumbers or carrots soaked in a quick pickling brine of apple cider vinegar, water, garlic, dill, and kosher salt. This no-cook method yields crunchy, tangy pickles ready in just 20 minutes after chilling in the fridge. It’s a straightforward recipe that provides a fresh, mildly garlicky and herbaceous pickle to add crispness and brightness to sandwiches, salads, or snacks.

Description

Easy Refrigerator Pickles combine cucumbers or carrots with a bright, slightly sour pickling liquid made from apple cider vinegar, water, garlic, and fresh dill. The warm brine dissolves the salt and helps infuse the fresh flavors quickly when poured over the sliced vegetables. Unlike traditional fermented pickles, these are prepared to chill and eat immediately without fermentation time.

The texture is crisp and firm since the vegetables are not cooked or softened first; the garlic and dill add aromatic layers to the mild vinegar base. This method makes for an approachable fresh pickle with balanced tartness and herbal notes.

These pickles can be a simple side or topping to accompany sandwiches, grilled meats, or cheese plates. They bring a refreshing, vinegary crunch that can brighten many savory dishes.

The pickles should be fully submerged in the brine and refrigerated immediately. They keep well for up to two weeks in the fridge, making them convenient for quick preparation and lasting enjoyment. No special equipment or fermentation is necessary, making this a straightforward and accessible homemade pickle recipe.
