Description
This casserole blends shredded Swiss cheese, sauerkraut mixed with mayonnaise, Thousand Island dressing, and optional caraway seeds, along with shredded or finely chopped deli corned beef or pastrami. The sauerkraut is thoroughly drained and squeezed dry to eliminate excess moisture before combining with the dressing. Bread crumbs made from dark rye bread are mixed with melted butter to create a crumb topping that adds crunch after baking.
The casserole is assembled in a greased 9x13 inch dish with sauerkraut mixture on the bottom, corned beef on top, then Swiss cheese, finished with the bread crumb and butter mix. It bakes at 350°F for 20 to 25 minutes until bubbly and golden on top.
This dish offers the flavors of a Reuben sandwich in a convenient casserole form which can be sliced and served at gatherings or family meals. Chopping sauerkraut into smaller pieces can help with serving. Draining and pressing out moisture from sauerkraut prevents a watery casserole.
Ingredients
- ½ cup mayonnaise
- ½ cup Thousand Island dressing
- 1 teaspoon caraway seeds optional
- 16 ounces sauerkraut drained and squeezed dry
- 12 ounces corned beef shredded or chopped fine, deli-style, sliced
- 1 swiss cheese 16 ounces, shredded
- 3 cups dark rye bread crumbs about 3 slices
- 1/4 cup butter melted
- parsley for garnish
Instructions
- Preheat oven to 350°F degrees. Lightly grease a 9" x 13" casserole dish with non-stick cooking spray. Set aside.
- Shred Swiss cheese. Place bread in a blender or food process and pulse until crumbs form. Drain sauerkraut and set aside.
- In a small mixing bowl mix together mayonnaise, Thousand Island dressing, and caraway seeds (optional).
- Add well drained sauerkraut to dressing mix with a fork until well coated.
- Place 3/4 of the sauerkraut mix into the prepared casserole dish spreading evenly.
- Add diced corned beef or pastrami over the sauerkraut.
- Top mix with shredded Swiss cheese.
- In a small bowl add the butter to the bred crumbs and gently mix with a fork until well incorporated.
- Sprinkle bread crumbs over the Reuben casserole and bake for 20-25 minutes or until cheese is melted and bubbly.
- Remove from oven, cool and add chopped parsley if desired.
Notes
- Drain sauerkraut well in a colander and press out excess moisture before mixing to avoid sogginess.
- For easier serving, chop sauerkraut into smaller bite-sized pieces.
