  • 3 cups rhubarb chopped, 400g
  • ½ cup sugar 100 g
  • ½ cup water
  • 2 tablespoons orange juice or water

Instructions

  1. Add all ingredients to a pot. Bring to the boil, then reduce the heat and simmer for 5 minutes or until soft (but the rhubarb hasn’t completely broken down).
  2. Allow to cool slightly and serve.Rhubarb compote is great on oatmeal, yogurt, custard, cheesecake, waffles, ice cream etc…

Notes

  • Substitute orange juice with lemon, lime, or grapefruit juice for a different citrus note.
  • Add ground ginger, cinnamon, or pumpkin pie spice to warm the flavor.
  • Include berries such as strawberries, blueberries, raspberries, or blackberries alongside rhubarb.
  • Grate fresh ginger for a subtle spicy hint.
  • Store leftover compote in a sealed glass jar in the refrigerator for up to two weeks.
