Description
The compote combines diced rhubarb and strawberries, which break down during gentle cooking with sugar, lemon zest, and lemon juice to produce a syrupy fruit sauce. The cooking process extracts moisture from the rhubarb, which thickens as it simmers for about 10 to 15 minutes. Candied ginger, if added, contributes a mild spiced note that complements the tartness of the rhubarb and fresh fruitiness of the strawberries.
The resulting texture is thick and spoonable, suitable for layering on yogurt, pancakes, or ice cream. The balance of sweet and tart flavors is enhanced by the citrus elements. Ingredients
- 300 g rhubarb diced, fresh or frozen
- 115 g strawberry diced, fresh
- 50 g granulated sugar or to taste
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 15 g candied ginger cut into small pieces, optional
Instructions
- In a small saucepan, combine rhubarb, strawberries, sugar, lemon zest, lemon juice and candied ginger.
- Cook over medium heat until the water from the rhubarb releases and becomes thick and syrupy, about 10-15 minutes.
- Transfer to a clean, sterile glass jar and let cool.
- Cover with a lid and store the compote in the fridge for up to 1 week.
