Easy Roasted Asparagus

This Easy Roasted Asparagus recipe uses fresh asparagus spears tossed with olive oil, lemon juice, garlic powder, salt, and pepper, then baked until tender and slightly caramelized. An optional sprinkle of freshly grated Parmesan cheese adds a savory, nutty finish. The roasting process enhances the natural sweetness and softens the asparagus while keeping a slight bite, making it a straightforward side dish that complements many meals.

Description

Starting with trimmed asparagus spears, they are coated evenly with olive oil and lemon juice, and seasoned with garlic powder, salt, and black pepper. Baking at 425°F on a middle rack allows the asparagus to cook through with a tender-crisp texture and develop some roasted notes. An optional Parmesan topping melts slightly to add richness and a contrasting flavor layer.

The recipe's simple technique highlights the natural flavors of asparagus without overpowering them. Cooking times vary with thickness, so thinner spears may finish sooner. The dish pairs well with a variety of entrées or can be served as part of a vegetable platter.

Ingredients

Servings
  • 1 bunch asparagus ends trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • salt to taste
  • black pepper to taste
  • 1/2 cup Parmesan Cheese optional, freshly grated

Instructions

  1. Preheat your oven to 425F and move the rack to the middle position.
  2. Place the asparagus on a baking sheet (if desired, line with foil or parchment paper for easy clean-up), and then pour the olive oil and lemon juice on top, then sprinkle with the garlic powder and salt and pepper. Use your hands to toss, and then spread the asparagus in an even layer.
  3. Sprinkle the parmesan over top.
  4. Bake, uncovered, for 12-15 minutes or until cooked to your liking. Asparagus thickness can vary a lot, so check for doneness on the earlier side of cooking time if your asparagus is of average thickness. For super thin asparagus, I'd test after 10 minutes.
