Easy Roasted Red Pepper Soup

Ingredients

  • 28 ounces whole peeled tomatoes
  • 3 cloves garlic
  • 9 ounces onion diced
  • 2 tablespoons tomato paste
  • 16 ounces red bell pepper roasted
  • 16 ounces broth chicken or vegetable
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot over medium high heat saute onions until onions are tender. Add garlic and continue to cook for 2 minutes.
  2. Add the tomatoes, tomato paste, roasted red peppers, broth, salt and pepper to the pot and stir together.
  3. Bring to a boil and then reduce to a simmer and cover with a lid.
  4. Cook for 30 minutes.
  5. Remove the soup from the heat and use an immersion blender to puree the soup ingredients until the soup is smooth.
  6. Add salt and pepper to taste.

Notes

  • If you do not have an immersion blender you can carefully add the soup to a regular blender and puree it.
