Easy Russian Beet Salad with Walnuts

Easy salad using red beets, cranberries, walnuts, and minced garlic with mayo used for the dressing.

Ingredients

  • 1 lb beet cooked, red
  • 2 garlic cloves
  • ¼ cup dried cranberries (craisins)
  • ¼-½ cups walnuts
  • 2 tbsp mayonnaise
  • ¼ tsp salt or to taste

Instructions

  1. Roast the walnuts in a small skillet making sure they don't burn. Remove from the skillet and set aside to cool.
  2. Grate the cooked red beets using a boxed grater. Transfer to a salad bowl (or grate directly into the bowl).
  3. Grate the garlic clove using a fine grater (I used a cheese grater) or mince using a knife. Add to red beets.
  4. Coarsely chop the roasted walnuts and add them to the salad.
  5. Measure out the cranberries and add to the salad.
  6. Add the mayonnaise and season with salt. Mix well together. (Add more salt if needed).
  7. Serve.
