Easy Salisbury Steak with Gravy
Description
The recipe blends ground beef with panko breadcrumbs, Worcestershire sauce, garlic powder, thyme, and onion powder to form eight evenly sized patties resembling small meatloaves. Panko adds texture while the spices build flavor. The patties are cooked in olive oil until they have a browned, crispy exterior and are cooked through.
The onion gravy is made by sautéing diced sweet yellow onions in salted butter until softened, then stirring in flour to form a paste. Worcestershire sauce and beef stock are gradually added and whisked while cooking to thicken into a rich sauce. The cooked patties are nestled in the gravy to stay warm and absorb some of the sauce.
This dish delivers a tender interior with a crispy sear outside on the patties, matched by a flavorful, smooth gravy rich with onion and umami notes. It can be plated with mashed potatoes or vegetables for a full meal.
Using a hot pan ensures a good sear on the patties while keeping juices inside. The gravy benefits from high-quality salted butter and the optional addition of soy sauce for deeper flavor. Substituting day-old bread or crackers for panko is possible but changes texture slightly.
Ingredients
Salisbury Steaks
- 2 ½ lbs ground beef 85/15 fat ratio
- 2 cups panko breadcrumbs
- ¼ cup Worcestershire sauce
- 2 teaspoons garlic powder
- 2 teaspoons thyme dried
- 1 teaspoon onion powder
- 2 tablespoons olive oil for cooking
Onion Gravy
- 3 tablespoons butter salted
- ⅔ cup onion diced, sweet yellow
- 3 tablespoons all-purpose flour
- ⅓ cup Worcestershire sauce
- 3 cups beef stock
- salt to taste, sea salt
- black pepper to taste
Instructions
- Combine Salisbury steak ingredients, except the olive oil, in a large bowl until thoroughly mixed, then divide into 8 evenly shaped patties. Set aside.
- In a large pan, melt the butter over medium heat, then add the onion and cook for 3-4 minutes or until lightly softened. Stir in the flour until a paste forms, then add the Worchestershire sauce and stir to combine. Slowly whisk in the beef stock and bring mixture to a low boil over medium heat. Cook until thickened, about 10 minutes, season with salt and pepper as desired, then reduce heat to the lowest setting while cooking the steaks.
- In a second large non-stick pan over medium/medium-high heat, add 1 tablespoon olive oil. Once hot, add half of the patties and cook for 4 minutes before flipping and cooking until no longer pink, about 5 minutes more. Remove steaks from pan and nestle into the gravy to keep warm, then add remaining olive oil and steaks and cook until no longer pink. Plate steaks and drizzle with remaining gravy. Best served with creamy mashed potatoes, and enjoy!
Notes
- Seasoned breadcrumbs provide texture but can be replaced with crushed crackers or day-old bread.
- Worcestershire sauce is key for umami; substituting half with soy sauce intensifies flavor, especially in the gravy.
- Use high-quality salted butter for a richer gravy taste.
- Preheat the pan thoroughly to achieve a crisp sear on the patties while keeping them juicy inside.
