  • 1 tbsp neutral cooking oil for cooking, generic cooking oil
  • 3 carrot diced, small
  • 1/2 celery diced, stalk
  • 1/2 green onion minced, bunch
  • 3 tbsp flour
  • 3 qt water
  • 1/4 tsp red pepper flakes
  • 1 tbsp Better Than Bouillon beef or chicken
  • 1 potato Yukon Gold, large
  • 1 lb smoked salmon diced or chopped
  • 1/2 cup heavy whipping cream
  • 1 tsp kosher salt adjust to taste

Instructions

  1. Dice the carrots and celery into small cubes. Next, mince the green onions. Preheat a soup pot or Dutch oven with a bit of oil. Add in carrots and celery and cook them until they soften.
  2. Add flour and red pepper flakes to the mixture, stirring to combine. Cook the flour for a couple of minutes to remove the raw flavor.
  3. Add the water and broth concentrate. Bring to a boil.
  4. Dice the potatoes and smoked salmon into small cubes.
  5. Add the smoked salmon and potatoes to the soup pot. Cook until the potatoes are tender.
  6. Add the heavy whipping cream to the soup. Bring it to a boil and immediately remove it from heat. Season with salt to taste.
