Description

Easy Salsa Roja starts by simmering quartered onion, halved Roma tomatoes, seeded serrano chiles, and garlic cloves in water until softened. After about 20 minutes, the mixture is blended with fresh cilantro and salt to create a vibrant salsa base. The blended salsa is then cooked in hot neutral oil, which enriches the flavor and helps thicken it. After an additional simmer, the salsa achieves a smooth, rich texture with balanced heat and bright herbal undertones from the cilantro.

The heat level can be adjusted by varying the number of serrano chiles, with a medium heat achieved using two. The salsa freezes well in 2-cup portions for convenient future use, allowing easy defrosting of ready-made salsa batches.

Ingredients

  • 5 plum Roma tomatoes
  • 1 white onion
  • 12 cilantro stalks
  • 2 serrano chile
  • 2 cloves garlic
  • 1 tsp. salt salt to taste
  • 2 tbsp. neutral cooking oil generic cooking oil
  • 2 cups water

Instructions

  1. Cut the onion in quarters.
  2. Cut the tomatoes in half.
  3. Cut the stems off the chiles, slice in half, and remove seeds.
  4. Peel the garlic.
  5. Add all of the ingredients except the cilantro and salt to a large pot.
  6. Add just enough water to almost cover the ingredients (about 4 cups).
  7. Bring the water to a boil and then reduce to low. Simmer for 20 minutes.
  8. Blend all of the ingredients including the cilantro with the cooking water (blend in 2 batches).
  9. Heat 2 tablespoons of cooking oil in the same pot over medium heat.
  10. Pour the blended salsa into the hot oil.
  11. Reduce the heat and simmer for 20 minutes.
  12. Adjust the salt to taste.

Notes

  • Adjust serrano chile quantity to control heat: use 1 for mild, 2 for medium, or 3 for hot salsa.
  • Removing seeds and veins from chiles is optional and won't significantly affect flavor.
  • This salsa freezes well; portion into 2-cup batches and store in freezer bags for convenient use.
