This easy sausage and egg breakfast casserole with bread topping makes the perfect weekend brunch! Make it the night before or the night of for a quick and delicious cheesy sausage egg breakfast casserole that will feed a family or an entire crowd!

Ingredients

  • 10 oz breakfast sausage we prefer Jones Dairy Farm pork sausage
  • 8 eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ tsp kosher salt
  • 1 tsp dried parsley
  • 4 oz Italian or Ciabatta bread , cut into 1/2 inch cubes

Instructions

  1. Cook breakfast sausage according to instructions on package. When you remove sausage from pan, use a slotted spoon and place on plate with paper towel to soak up extra juices.
  2. While sausage is cooking, cut bread into 1/2 inch cubes.
  3. Preheat oven to 350 degrees. Spray 8x8 or 9x9 baking dish with non-stick baking spray.
  4. Mix eggs, milk, salt, and parsley in large bowl and whisk until well combined.
  5. Add cheese into egg mixture and stir in.
  6. Add cooked sausage into mixture and stir in.
  7. Add bread cubes into bowl and stir in gently until well combined.
  8. Pour mixture into 8x8 or 9x9 prepared baking dish.
  9. Bake in oven for 30-40 minutes or until egg is completely cooked.
  10. Serve hot or at room temperature.

Notes

  • If you would like to make this ahead of time, I recommend doing all of the prep (cooking sausage; cutting bread; mixing the eggs, milk, cheese, and spices together) and then just combine right before you actually bake. If you mix them all together and leave mixed overnight, the bread tends to get soggy and you'll miss out on the crunchy bread topping that makes this so good.
