Easy Sautéed Mushrooms
Description
Easy Sautéed Mushrooms focuses on cooking baby bella mushrooms to develop depth of flavor. By starting with butter and olive oil in a skillet over medium heat, the mushrooms are sautéed until they release and then reabsorb liquids, gaining a golden-brown color. Adding garlic later ensures it softens without burning, while deglazing with white wine lifts browned bits for taste. The addition of fresh Italian parsley and lemon thyme adds brightness and herbal notes. This method results in earthy, tender mushrooms with a slight acidity from the wine.
These sautéed mushrooms can be served alongside steak, chicken, pork, or enjoyed as a flavorful vegetable side. Their texture is tender with some caramelized edges, providing a satisfying bite and enhanced umami. The recipe balances rich butter with fresh herbs and wine, making it adaptable to various meals.
Ingredients
- 1 ½ pounds baby bella mushroom
- 3 tablespoons butter unsalted
- 1 tablespoon olive oil
- 3 cloves garlic minced
- ⅓ cup white wine I use Pinot Grigio
- 1 tablespoon Italian parsley chopped, fresh
- 2 teaspoons lemon thyme or regular thyme, fresh
- ½ teaspoon salt
- ¼ teaspoon black pepper ground
Instructions
- Clean your mushrooms using a damp paper towel. Leave the small to medium mushrooms whole and slice the large ones in half. Heat a skillet to medium heat. Add in the butter and olive oil, once melted add in the mushrooms.
- Sauté for at least 8-10 minutes (stirring ofteor until you have developed some good color on them, this is key! If you cook them for less time, you won't get the same amazing flavor, so don't rush them! First, they will seem dry, but as they continue to cook, they will start to give up their liquid.
- Once most of the liquid has evaporated, make a well in the center of the pan and add in the garlic. Sauté for about 20 seconds, be careful not to burn it. Deglaze the pan with the white wine, scraping up those brown bits of flavor.
- Add in the salt and pepper and continue cooking for another 5 minutes or until most of the wine has evaporated. Stir in the parsley and thyme, then serve on the side of a steak, chicken, pork or whatever you like.
