Description

Easy Scalloped Potatoes combine 3 pounds of peeled, thinly sliced russet potatoes with a creamy mixture of ranch dressing, mayonnaise, whole milk, minced garlic, and shredded cheddar cheese. The potatoes are coated in this sauce and layered in a buttered casserole dish.

The dish is baked covered at 375°F for about 65 to 75 minutes, until the potatoes are tender. After uncovering, it bakes a few minutes longer and is broiled briefly to brown the cheese on top, creating a light crust with ample melted cheese beneath.

The final dish is allowed to rest before serving and is garnished with finely chopped chives for a fresh, mild onion flavor. The creamy sauce with ranch and mayonnaise imparts tanginess and richness, while garlic offers aromatic depth, making this a comforting side dish.

  • 1/2 cup ranch dressing (we used refrigerated yogurt ranch)
  • 1/2 cup mayonnaise
  • 1/2 cup milk whole
  • 3 garlic minced, cloves
  • 2 cups cheddar cheese shredded (8 oz), divided, medium
  • 3 lbs russet potato 5 large potatoes), peeled and thinly sliced less than 1/8" thick
  • 1/4 cup chives finely chopped, to garnish

Instructions

  1. Preheat oven to 375˚F with the rack in the center of your oven. You'll need a buttered 9x13 casserole dish.
  2. In a large mixing bowl, stir together ranch, mayonnaise, milk, minced garlic and 1 cup cheddar cheese. Add thinly sliced potatoes and stir until every slice is coated in the creamy sauce.
  3. Spread the potatoes evenly into the casserole dish, patting them evenly into the dish, then sprinkle on remaining 1 cup cheddar cheese.
  4. Cover tightly with foil and bake at 375˚F for 65-75 minutes or until tender when pierced with a knife. then remove foil and bake an additional 5 minutes. Broil on high heat for about 2-3 minutes at the end to lightly brown the cheese crust. Rest for 10-15 minutes then garnish with chives to serve.
