Description
Easy Seaweed Salad (Wakame) uses dried wakame seaweed soaked in water to rehydrate and expand, creating a slightly chewy texture that holds the salad's flavor well. Mix-ins such as minced shallot, ginger, and green onions provide mild pungency and freshness. The dressing of soy sauce and toasted sesame oil gives the salad an umami-rich, nutty depth, while yuzu or lemon juice adds a gentle citrus tang.
The salad can be enjoyed immediately after mixing or chilled for a few hours to deepen the flavor meld. It works well as a light appetizer, a side dish accompanying seafood or rice dishes, or a refreshing component in a Japanese-inspired meal.
Ingredients
- 35 g wakame dried, cut
- 600 ml water room temperature
- 1 shallot minced
- 1 knob ginger microplaned
- 2 talks green onions minced
- 2 tablespoon soy sauce
- 2 tablespoon sesame oil toasted
- 1 tablespoon yuzu or lemon juice, extract or juice
Instructions
- Place the dried wakame (seaweed) in a large bowl.
- Add 600ml room temperature water to the dried seaweed to cover.
- Let the seaweed reconstitute and absorb the water (about 10 minutes).
- Once the water has been absorbed, drain off any excess water.
- To the seaweed, add the minced shallot, ginger, green onions, soy sauce, sesame oil, and yuzu extract.
- Give everything a stir, until evenly combined.
- You can enjoy the salad right away, or store the salad in the fridge for a minimum of 6 hours for even more flavour.
