Easy Shirazi Salad

This simple Shirazi Salad is a refreshing Persian dish made with tomatoes, cucumbers, red onion, and fresh herbs, all tossed in olive oil and lemon (or lime) juice. It's crisp, flavorful, and the perfect side dish for any meal.

Ingredients
- 3-4 Roma tomato finely chopped
- 1 English cucumber finely chopped, or 4 small Persian cucumbers
- ½ green bell pepper finely chopped, or red bell pepper
- ½ red onion finely chopped
- ¼ cup parsley finely chopped
- 2 Tablespoons mint finely chopped
- 1 Tablespoon dill finely chopped, fresh
- 4 Tablespoons lemon juice I did lemon, or lime juice, fresh
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon sumac
- ¼ teaspoon salt to taste, sea salt
- ¼ teaspoon black pepper to taste
Instructions
- Combine all ingredients together in a large bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
Notes
- Storing: Store leftovers in an airtight container in the fridge for up to 3 days. The flavors will continue to develop, but the veggies will release some liquid as they sit. Give it a good stir before serving!
