Easy Shrimp Cakes

Easy Shrimp Cakes are pan-fried patties made by combining finely chopped shrimp with panko breadcrumbs, eggs, spices, lemon zest, smoked paprika, and green onions, then cooked until golden brown and crisp on the outside. They are accompanied by a spicy mayo made from mayonnaise and sriracha, which adds a creamy and mildly spicy complement. The cakes offer a tender interior with a lightly crispy crust, making them suitable as an appetizer or main course with a fresh, zesty flavor profile.

Description

This recipe blends chopped shrimp with binding ingredients including eggs and panko crumbs, along with flavor enhancers like smoked paprika, lemon zest, salt, and pepper. Green onions add a mild onion flavor and freshness. The mixture is shaped into large patties and cooked in a moderate amount of olive oil over medium heat to achieve a golden crust without excessive browning. This careful cooking preserves the delicate shrimp texture inside while providing a firm exterior.

The paired spicy mayo is simple yet complementary, made by mixing mayonnaise and sriracha for creamy heat with lemon wedges served alongside for brightness. Garnishing the cakes with additional chopped green onions adds a visual and flavor contrast. This dish works well served warm and fresh for best texture.

Ingredients

Servings

Shrimp Cakes

  • 2 egg large
  • 1 to 2 tablespoons sriracha optional and to taste
  • ¾ cup panko breadcrumbs
  • 2 tablespoons green onions finely chopped plus more for garnishing
  • ½ teaspoon kosher salt or to taste
  • ½ teaspoon black pepper or to taste, freshly ground
  • 1 teaspoon lemon zest
  • ½ teaspoon smoked paprika regular paprika may be substituted
  • 1 pound Shrimp cleaned and finely chopped, fresh
  • 3 to 4 tablespoons olive oil

Spicy Mayo

  • ½ cup mayonnaise or Miracle Whip
  • 1 tablespoon sriracha or to taste
  • lemon for garnishing, wedges

Instructions

Shrimp Cakes

  1. To a large bowl, add the eggs, optional sriracha, and whisk to combine.
  2. Add the panko, green onions, salt, pepper, lemon zest, smoked paprika, and stir to combine.
  3. Add the shrimp and knead the mixture with your hands to evenly distribute the shrimp within the other ingredients. Form 4 large patties.
  4. To a large skillet, add the olive oil, shrimp cakes, and cook over medium heat for about 3 to 4 minutes per side. I recommend keeping the heat at medium so the shrimp cakes don't brown too quickly or get too dark. While they cook, make the spicy mayo.

Spicy Mayo

  1. Add both ingredients to a small bowl and stir to combine.
  2. When shrimp cakes are done, garnish with green onions, and serve with spicy mayo and lemons.
