Easy Shrimp Cakes
Description
Chopped raw shrimp combine with panko bread crumbs, beaten eggs, hot sauce, green onion, dill, lemon juice and zest, smoked paprika, onion powder, salt, and pepper. The mixture is gently stirred and formed into patties, then fried in vegetable oil until the outside is golden brown and the inside cooked through. The incorporation of fresh dill and lemon adds fresh herbaceous and citrus notes, while smoked paprika provides a mild smoky flavor.
The accompanying dipping sauce, made from mayonnaise, sour cream, lemon juice, green onion, dill, and salt, complements the shrimp’s flavors and adds creamy acidity. Lemon wedges served alongside further brighten the dish. These cakes suit appetizer or light meal occasions and showcase fresh shrimp texture.
Use fresh or properly thawed shrimp for best quality. Avoid pre-cooking shrimp to prevent toughness, and keep hands wet when shaping patties if they feel sticky. Using a food processor can speed chopping but cut shrimp into uniform pieces manually if preferred.
Ingredients
- 1 pound Shrimp shelled and deveined
- 1 cup panko bread crumbs
- 2 egg beaten, large
- 2 tablespoons hot sauce
- 2 tablespoons green onion finely chopped
- 2 tablespoons dill finely chopped, fresh
- 1 lemon juiced and zested
- 1/2 teaspoon smoked paprika
- 1/2 onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil for frying, or canola oil or olive oil
- lemon for serving, wedges
Dipping Sauce:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- lemon juice of half
- 1 tablespoon green onion finely chopped
- 1 tablespoon dill finely chopped, fresh
- salt to taste
Instructions
- Using a sharp knife, cut the shrimp into small cube-like pieces.
- Transfer the shrimp to a large bowl and add the remaining ingredients: Panko bread crumbs, beaten egg, hot sauce, green onion, dill, lemon juice, lemon zest, paprika, onion powder, and salt. Stir gently to combine.
- Form the shrimp mixture into 8-10 patties. You can use an ice cream scoop to make each-sized portion.
- Next, heat the oil in a large pan over medium-high heat. Once the oil is hot, add the shrimp patties in a single layer and cook for 3-5 minutes on each side or until golden brown. Gently flip on the other side so as not to break the patties.
- Mix all the sauce ingredients in a small bowl until thoroughly combined. Serve with the shrimp cakes with lemon wedges on the side.
Notes
- Choose fresh, wild-caught shrimp with bright color and firm texture for best flavor and quality.
- Avoid shrimp with strong odors, discoloration, slimy shells, or empty stomachs to ensure freshness.
- Frozen shrimp may be used if free from freezer burn and properly thawed overnight in the refrigerator.
- Wash and dry shrimp thoroughly before chopping; do not cook shrimp before forming patties, as this leads to overcooked texture.
- If the shrimp mixture is sticky, chill it briefly and keep hands damp when shaping the cakes to prevent sticking.
- A food processor may be used to chop shrimp evenly, but manual chopping is an alternative.
