Description

  • 2 fennel bulb finely sliced
  • 150g oz radish finely sliced
  • 200 g/7oz salad greens of your choice
  • 1 English cucumber sliced
  • 1 baby cucumber sliced
  • 1-2 avocado sliced
  • ½ cup feta cheese crumbled

for the dressing

  • ¼ cup olive oil
  • ¼ cup lemon juice fresh
  • 1-2 tsp salt
  • black pepper to taste

Instructions

  1. Whisk together all the dressing ingredients in a large bowl then add the sliced fennel and radish. 
  2. Mix well and allow to marinate for at least 5 minutes but up to 30 minutes. 
  3. Add all the remaining ingredients into the bowl then toss well and serve.
