  • 2 pounds beef stewing
  • 2 cans baked beans 14 ounce cans, in tomato sauce
  • 1 ½ pounds potato baby or mini, cut in half
  • 12 ounce corn drained, canned
  • 1 cup carrot sliced, chopped or diced
  • ¾ cup onion chopped
  • 1 cup barbecue sauce
  • 28 ounce diced tomatoes canned
  • 1 tablespoon chili powder
  • 1 tablespoon garlic minced
  • 1 teaspoon black pepper optional

Instructions

  1. Spread stewing beef across bottom of your slow cooker. 
  2. Pour beans on top and stir to combine. 
  3. Add tomatoes, corn, carrots, onions, garlic, chili powder, barbecue sauce and potatoes. 
  4. Stir until blended. 
  5. Cover and cook on low for 8 hours or high for 4 hours.  Serve and enjoy! 

Notes

  • Use lean, tough cuts of beef with connective tissue for better flavor and tenderness.
  • Cook the stew for the full recommended time for the best texture and flavor development.
  • Add heartier root vegetables at the start and reserve delicate vegetables for later to avoid mushiness.
