Easy Slow Cooker Cowboy Stew
Description
The Easy Slow Cooker Cowboy Stew assembles diced stewing beef with canned baked beans in tomato sauce, baby potatoes, canned corn, carrots, chopped onions, garlic, chili powder, barbecue sauce, and diced tomatoes. These ingredients are combined in a slow cooker and cooked low and slow, allowing the tougher cuts of beef to become tender and infusing the stew with smoky, tangy, and slightly spicy flavors.
The baked beans bring a mild sweetness and sauciness, while the potatoes and carrots add body. Barbecue sauce and chili powder deepen the savory profile with a balanced heat and tang. The long cooking time softens the vegetables without turning them mushy, creating a thick, satisfying stew perfect for cooler days or filling family meals.
Serving suggestions include enjoying it as a main dish, possibly paired with bread or over rice for additional heartiness. The recipe notes emphasize selecting leaner, tougher beef cuts with connective tissue for best results and recommend allowing sufficient cooking time to develop flavor and tenderness.
If the stew is watery, removing the lid toward the end helps concentrate the broth. Seasoning to taste after cooking ensures a balanced final flavor.

- ¾ cup onion chopped
- 1 cup barbecue sauce
- 28 ounce diced tomatoes canned
- 1 tablespoon chili powder
- 1 tablespoon garlic minced
- 1 teaspoon black pepper optional

- Pour beans on top and stir to combine.
- Add tomatoes, corn, carrots, onions, garlic, chili powder, barbecue sauce and potatoes.

Notes
- Use lean, tough cuts of beef with connective tissue for better flavor and tenderness.
- Cook the stew for the full recommended time for the best texture and flavor development.
- Add heartier root vegetables at the start and reserve delicate vegetables for later to avoid mushiness.
- Keep the slow cooker lid on during cooking and remove it near the end if the stew is too watery to thicken the broth.
- Adjust seasoning to taste after cooking for the best results.
