Easy Slow Cooker Cube Steak Recipe with Gravy

This cube steak recipe uses a blend of spices to season tenderized beef, seared to develop a crust before slow cooking in a savory onion and mushroom gravy. The combination of browned steak and caramelized vegetables creates a rich, thick sauce that complements the hearty meat. Ideal for a comforting meal, this dish pairs well with mashed potatoes, vegetables, or cauliflower mash, helping the gravy soak into side dishes for added flavor.

Description

Easy Slow Cooker Cube Steak Recipe with Gravy features cube steak seasoned with a blend of brown sugar, smoked paprika, garlic and onion powders, chili powder, and other spices. The steak is tenderized, coated with flour, and seared to form a crust before slow cooking. The gravy is made with caramelized onions, mushrooms, beef broth, and seasoning thickened with cornstarch or alternatives, layered with butter at the end for richness.

This dish results in tender meat infused with the savory, slightly sweet mushroom and onion gravy. The slow cooking allows the flavors to meld and the gravy to thicken naturally. It is intended to be served hot alongside mashed potatoes, cauliflower, broccoli, or sweet potatoes to catch the flavorful gravy.

An alternative stovetop method simmers the steak with gravy after searing, finishing with butter for a glossy sauce. Keto substitutions include almond flour and xanthan gum as a thickener. Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months for convenient reheating.

Ingredients

Servings
  • 2 lbs cube steak about 4 ½ pound cube steaks
  • 3 tablespoons all-purpose flour or GF flour or almond flour
  • 2 tablespoons neutral cooking oil olive or vegetable oil, generic cooking oil
  • 2 tablespoons butter

Cube Steak Seasoning

  • 1 teaspoon brown sugar or sugar substitute
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon chili powder
  • ½ teaspoon ground mustard
  • ¼ teaspoon black pepper

Onion and Mushroom Gravy

  • 2 tablespoons cornstarch or sub arrowroot (1-1 replacement) or with ¼ teaspoon xanthan gum for keto
  • 2 cups beef broth
  • 1 teaspoon beef bouillon or 1 cube beef bouillon cube, brand: better than beef
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 teaspoons Worcestershire sauce
  • 1 large yellow onion or sweet onion, sliced thin
  • 1 package mushroom optional, sliced
  • 2 tablespoons butter used at very end of recipe

Instructions

  1. In a small bowl combine steak seasonings and set aside.
  2. In a medium bowl whisk together the beef broth (2 cups), cornstarch (2 tablespoons) (or alternative) along with the beef bouillon (1 tsp/1 cube), onion powder (1 tsp), garlic powder (½ tsp) and Worcestershire sauce (2 tsp), set aside.
  3. If desired, place cube steak between two pieces of plastic wrap and using meat tenderizer, pound until ½ inch thin. Rub the meat seasoning evenly over both sides of the steaks, then sprinkle the flour (3 tablespoons) over the steaks. Meanwhile, heat a skillet over medium-high heat and add 2 TBL oil and heat until shimmering. Add cube steaks and sear each side 2-3 minutes until a nice crust has formed. Remove to a plate.
  4. Add 2 tablespoons of butter to the pan and saute the onions and mushrooms until softened and slightly caramelized, scraping the bottom to get all of the flavor. Cook 5-10 minutes or so. Add a splash of the gravy mixture if there are brown bits still stuck to the bottom of the pan.
  5. Pour half the onion mixture into a 6-7 quart crockpot, add the steaks and any accumulated juices to the crockpot in as close to a single layer as possible. Add the balance of the onions and mushrooms. Pour the gravy mixture over, cover and set the time LOW 7-8 hours or HIGH 3-4 hours (tho, low is best).
  6. When time is up, remove steaks to a plate and cover to keep warm. Swirl cold butter into gravy stirring until melted. Serve immediately over rice, noodles, or mashed potatoes or mashed cauliflower.

Notes

  • The stovetop method skips slow cooking by simmering steaks in gravy, allowing a quicker preparation.
  • Keto adjustments include using almond flour instead of regular flour and xanthan gum as a thickener.
  • Store leftovers in an airtight container refrigerated up to 3 days or frozen up to 3 months.
  • Serving ideas include mashed potatoes, mashed cauliflower, broccoli, or sweet potatoes to complement the gravy.
