Easy Smothered Pork Chops

Easy Smothered Pork Chops features bone-in center-cut pork chops seared until golden then finished in the oven, topped with a rich gravy made from sautéed onions, mushrooms, garlic, and a flour-thickened chicken broth. The combination yields tender pork with a savory, creamy mushroom sauce that complements the meat’s texture and flavor, suitable for a satisfying main course.

Description

This recipe for Easy Smothered Pork Chops starts with thick, bone-in center-cut pork chops seasoned generously with salt and pepper, then seared in a skillet until golden brown on both sides. They are transferred to the oven to finish cooking to a safe internal temperature while juices are retained. Meanwhile, a gravy is prepared in the same skillet by sautéing sliced white or cremini mushrooms and onions in olive oil, then adding butter and garlic. Flour is incorporated to create a roux which is then slowly mixed with chicken broth to form a smooth, thickened sauce. The final dish features pork chops smothered in a savory mushroom and onion gravy that adds moisture, flavor, and richness to the meat. This homestyle preparation delivers a comforting texture where tender pork meets creamy sauce, making it suitable for serving with mashed potatoes or vegetables for a hearty meal.

Ingredients

Servings
  • 4 pork chops 1 to 1 1/2-inch thick, bone-in, center cut
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large white onion halved and sliced
  • 8 ounces white mushrooms sliced, or cremini mushrooms
  • 2 tablespoons butter
  • 2 teaspoons garlic minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 pan with nonstick cooking spray.
  2. Pat 4 bone-in center cut pork chops dry with paper towels. Season both sides with 1 teaspoon salt and 1 teaspoon black pepper.
  3. Heat a large skillet over medium-high heat. Add pork chops and sear for 3 to 4 minutes per side until golden brown. Transfer the seared chops to the prepared 9x13 pan. Finish cooking in the oven until they reach an internal temperature of 145°F (63°C), about 15 minutes.
  4. Return the skillet to medium-high heat. Add 1 tablespoon olive oil, 1 large white onion (halved and sliced), 8 ounces white or cremini mushrooms. Cook for 5 to 7 minutes, stirring occasionally, until softened.
  5. Add 2 tablespoons butter and 2 teaspoons minced garlic. Cook for 1 minute, stirring frequently, until fragrant. Sprinkle in 2 tablespoons all-purpose flour. Stir for 1 minute until no white streaks remain.
  6. Slowly pour in 2 cups chicken broth, stirring continuously. Bring to a simmer and cook until thickened, about 3 to 5 minutes. Taste the gravy and add additional salt, if needed.
  7. When the pork chops are finished baking, return them to the skillet. Spoon the onion and mushroom gravy over the pork chops. Serve hot.

Notes

  • Thinner pork chops (about 1/2 inch thick) can be fully cooked in the skillet without oven finishing, cooking 4 to 5 minutes per side.
  • For best results, use thick-cut pork chops to maintain juiciness and texture during cooking.
