Easy Soda Bread
Description
This soda bread uses just a few ingredients: all-purpose flour, baking soda as the leavening agent, salt for flavor, and buttermilk which reacts with the baking soda to help the bread rise. The method combines dry ingredients before incorporating the buttermilk, gently mixing to form a dough without overworking, which preserves its tender texture.
The dough is shaped into a round loaf and scored with a large X on top to allow steam to escape during baking. It is baked first at a high temperature for a short time to set the crust, then at a lower temperature to finish baking, resulting in a bread with a crisp exterior and soft interior.
If buttermilk is unavailable, it can be substituted by adding vinegar or citrus juice to regular milk, allowing acidity to activate the baking soda properly.
Ingredients
- 2 cups all-purpose flour $0.27
- 1/2 tsp baking soda $0.01
- 1/2 tsp salt $0.06
- 1 cup buttermilk $0.32
Instructions
- Set a rack in the middle of your oven and preheat it to 450°F. Mix the flour, baking soda, and salt in a large bowl until they are fully incorporated.
- Form a well in the center of the flour mixture and fill the well with the buttermilk.
- Use a fork to incorporate the flour into the buttermilk little by little until a thick batter forms. Use your hands to incorporate the final bits of flour and gently shape the batter into a dough. Do not overwork the dough.
- Transfer the dough to a floured work surface and gently shape it into a round 6 inches in diameter and about 1 1/2 inches thick.
- Place the dough in a Dutch oven or cast iron skillet. Use a sharp knife to cut a large x into the top of the dough.
- Bake for 10 minutes at 450°F. Then lower the oven temperature to 400°F and continue baking until the bread is golden brown and crusty on the outside, about 20 minutes. Transfer to a rack and cool.
Notes
- If you don’t have buttermilk, make a substitute by adding one tablespoon of vinegar or lemon juice to a cup of milk and letting it sit briefly before use.
- Use distilled white vinegar or any acidic juice for the buttermilk substitute.
