Easy soft and fluffy bread rolls

These Easy soft and fluffy bread rolls yield light, tender rolls with a delicate crumb and thin crust. Made with milk, instant yeast, butter, and eggs, the dough is kneaded until just sticky and allowed to rise twice, resulting in soft balls of bread baked to a golden top. Brushed with butter after baking, they stay moist and flavorful. Ideal for sandwiches or as dinner rolls, they provide a classic soft bread texture.

Description

This recipe for Easy soft and fluffy bread rolls produces yeasted bread with a soft interior and lightly golden exterior. Warm milk activates the instant yeast, while sugar feeds the yeast to encourage a good rise. The dough incorporates eggs and softened butter for richness, and salt balances the flavors. Kneading achieves a soft but manageable dough that is only slightly sticky. After an initial hour-long rise covered to maintain warmth, the dough is divided into eight equal pieces and formed into balls. A second rise allows for puffier rolls.

The egg wash applied before baking gives the rolls a shiny, golden finish, while melting butter brushed post-baking adds softness and flavor. Baking at 180°C achieves an evenly baked crumb with a tender bite. Versatile and straightforward, these rolls suit any meal as a bread accompaniment or for sandwiches. The recipe uses common white flours such as cake, all-purpose, or bread flour, whichever is available.

Ingredients

Servings
  • 1 cup milk warm
  • 10 g (2tsp) instant yeast
  • 1 tsp sugar
  • 3-4 cups flour (any white flour can be used: Cake, all purpose or bread)
  • tsp salt
  • 1 large egg
  • 1/4 cup butter softened

For the egg wash

  • 1 egg
  • 2 tbsp water
  • 2 tbsp butter for finishing, melted

Instructions

  1. Whisk milk, sugar and yeast together. Allow to stand for 10 minutes until foamy.
  2. In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour and salt.
  3. With the mixer running, add the milk mixture and allow to knead in. Add the egg and allow to beat in.
  4. Add the butter, allow to knead in. At this point the dough will be quite sticky, add the remaining cup of flour one tablespoon at a time, until the dough is soft, smooth and just slightly sticky.
  5. Cover with plastic or a damp dish towel and allow to rise for 1 hour. While the dough is rising, prepare two sheet pans by lining them with parchment or baking paper.
  6. Transfer the dough to a floured surface and divide into 8 equal pieces. Roll each piece of dough into a ball then place on the prepared sheet pans. Take care not to place them too close together as they will continue rising.
  7. Cover again and allow to rise for 30 minutes while you preheat the oven to 180°C/350°F. Whisk the egg and water together for the egg wash.
  8. Brush the dough balls with egg wash then place in the oven and allow to bake for 15-20 minutes until golden brown and risen. Once baked the bread rolls will sound hollow when tapped on the bottom.
  9. Remove, brush with a little butter and allow to cool for 10 minutes before serving.
