Ingredients
- 2 cups all-purpose flour at least 11% protein
- 1 pinch salt if using unsalted butter add ¼ teaspoon salt
- 1 teaspoon baking powder
- ½ cup butter softened; if using unsalted butter add ¼ teaspoon salt
- 1 cup granulated sugar
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 1 cup cherries pitted, quartered or halved
*If using unsalted butter add ¼ teaspoon salt.
Instructions
- In a medium bowl whisk together the flour, salt and baking powder.
- In the mixing bowl beat butter and sugar until creamy approximately 2 minutes. Add the egg and vanilla and beat to combine. Add the flour mixture in 2 parts, beating on low to almost combine, then add the quartered or halved cherries and beat on low to combine, don't over beat.
- Cover the bowl and chill 1 hour in the fridge.
- Pre-heat oven to 350F / 180C. Line a baking sheet or two with parchment paper.
- Remove the dough from the fridge and form into golf ball size balls, place on the prepared cookie sheets approximately 1 inch apart and bake for 15-20 minutes or until lightly golden. Dust with powdered sugar or drizzle with melted chocolate if desired before serving. Enjoy!

- Store baked cookies in an airtight container at room temperature for two to three days to maintain softness.
- Freeze cooled cookies in a sealed container or bag for one to two months to extend shelf life.
