Easy Soft Cherry Cookies

Easy Soft Cherry Cookies are tender cookies made from all-purpose flour, butter, sugar, and fresh or frozen cherries. The dough is chilled before baking to help preserve the cherries' shape and soften the texture. Baking produces a delicate, lightly golden cookie that holds chunks of juicy cherry pieces inside. They can be enjoyed plain or dusted with powdered sugar or drizzled with melted chocolate. Their softness and balanced sweetness make these cookies a pleasant treat for casual snacking or dessert.

Description

Easy Soft Cherry Cookies bring together a simple dough of flour, butter, sugar, egg, and vanilla, folded gently with pitted and halved cherries to maintain their integrity during baking. The dough is chilled to help the cookies keep their shape and to mellow the flavors. Once baked at 350°F, the cookies develop a light golden color with a soft crumb that contrasts the bursts of fruity cherry pieces within.

The recipe allows for flexibility in cherry choice, including fresh, frozen, or maraschino cherries, with adjustments to sugar depending on sweetness. These cookies offer a balance of sweet dough and tart cherries, resulting in a delicately flavored treat.

Serving suggestions include a dusting of powdered sugar or a drizzle of melted chocolate for added sweetness. The cookies store well at room temperature in an airtight container for several days and can be frozen for longer storage, preserving their texture and flavor.

When fresh cherries are unavailable, thawed frozen cherries or maraschino cherries can be substituted, though maraschino cherries add more sweetness. Adjust sugar accordingly to maintain balance.

  • 1 teaspoon vanilla extract
  • 1 cup cherries pitted, quartered or halved

*If using unsalted butter add ¼ teaspoon salt.

Instructions

  1. In a medium bowl whisk together the flour, salt and baking powder.
  2. In the mixing bowl beat butter and sugar until creamy approximately 2 minutes. Add the egg and vanilla and beat to combine. Add the flour mixture in 2 parts, beating on low to almost combine, then add the quartered or halved cherries and beat on low to combine, don't over beat.
  3. Cover the bowl and chill 1 hour in the fridge.
  4. Pre-heat oven to 350F / 180C. Line a baking sheet or two with parchment paper.
  5. Remove the dough from the fridge and form into golf ball size balls, place on the prepared cookie sheets approximately 1 inch apart and bake for 15-20 minutes or until lightly golden. Dust with powdered sugar or drizzle with melted chocolate if desired before serving. Enjoy!

Notes

  • Store baked cookies in an airtight container at room temperature for two to three days to maintain softness.
  • Freeze cooled cookies in a sealed container or bag for one to two months to extend shelf life.
  • If fresh cherries aren’t available, use thawed and drained frozen cherries as an alternative.
  • Maraschino cherries can replace fresh or frozen cherries but reduce sugar to balance added sweetness.
