Easy sour cream potato salad

Easy sour cream potato salad features boiled baby potatoes tossed with a creamy sour cream-based dressing seasoned with garlic powder, salt, pepper, and fresh chives. The warm potatoes absorb the dressing, resulting in a flavorful, simple salad that can be served chilled or at room temperature as a side dish.

Description

This potato salad uses small new potatoes, halved and boiled until tender but not falling apart. The dressing combines sour cream with optional milk to adjust creaminess, seasoned with garlic powder, salt, and black pepper. Chopped fresh chives add a mild onion flavor and color contrast.

After cooking, the slightly warm potatoes are mixed with the dressing so they soak up seasoning well, making the salad flavorful throughout. Cooling the salad before serving enhances its refreshing, creamy texture and allows flavors to meld.

This salad works well as a side for barbecues, picnics, or casual meals. Adjust seasoning as needed depending on potato size and personal taste. Its straightforward ingredients and method make it a reliable make-ahead dish that suits various occasions.

Ingredients

Servings
  • 1 kg / 2lbs new potato or baby potato
  • 1 cup (250ml) sour cream
  • 1-2 tbsp milk optional, or water
  • ½ tsp garlic powder
  • 1-2 tsp salt
  • 1-2 tsp black pepper
  • ½ cup chive finely chopped, fresh

Instructions

  1. Halve the baby potatoes and cook in a large pot of salted, boiling water until cooked. (The potatoes are cooked when a knife's tip can easily be inserted.)
  2. Drain the potatoes and allow to cool slightly.
  3. To make the dressing, mix the sour cream and seasoning and thin out with a little milk or water if necessary.
  4. Pour the dressing over the cooked potatoes and mix. (Adding the dressing to the potatoes while they are still warm will allow the potatoes to absorb the dressing.)
  5. Taste and adjust the seasoning if necessary then allow to cool completely before serving.
