Easy Soy Mushroom Udon
Description
This recipe starts by boiling udon noodles until al dente, then rinsing with cold water to stop cooking and prevent stickiness. Mushrooms are sautéed in vegetable oil until most of their moisture evaporates, concentrating their flavor. Minced garlic is added near the end to infuse aroma without burning.
The cooked noodles return to the pan with a combination of light soy sauce for saltiness and dark soy sauce for deeper color and richness. Ground black pepper provides mild heat, and a drizzle of toasted sesame oil adds a nutty note. Garnishing with chopped green onion and sesame seeds introduces freshness and crunch.

Ingredients
- 500 g udon noodles 2 packs (frozen)
- 1 lb mushrooms sliced
- 5 garlic minced, cloves
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce adjust according to your taste, light
- 1 tablespoon dark soy sauce
- ½ teaspoon black pepper ground
- 1 teaspoon sesame oil
Garnish:
- green onion chopped, or scallions
- sesame seeds
Instructions
- Bring water up to a boil in a large pot.
- Add in the udon noodles and cook until al dente, be sure not to overcook.
- Drain the noodles and rinse under cold water. Set aside.
- Heat a large pot or skillet over medium high heat and add in vegetable oil.
- Add in the sliced mushrooms and sauté, stirring every so often, until the mushrooms cook down and most of the liquid has evaporated (leaving a little bit of liquid behind), about 7-8 minutes.
- Next, add in the minced garlic and continue to stir until softened and fragrant.
- Reduce the heat, transfer the drained udon noodles into the pot and add in 1 tablespoon of light soy sauce and 1 tablespoon of dark soy sauce.
- Use a pair of tongs to coat the noodles in the sauce and season with black pepper.
- Taste and adjust seasoning to your liking.
- Remove from heat and drizzle in sesame oil.
- Give the noodles a final toss and garnish with green onions and sesame seeds if desired.
- Serve immediately.
