Easy Spinach Souffle Recipe

This Easy Spinach Souffle blends thawed, drained spinach with a creamy béchamel sauce, seasoned with nutmeg, salt, and pepper, combined with whipped egg whites for a light, airy texture. Baking yields a puffy, golden-topped souffle with a tender, moist interior. It’s a vegetable-forward side or light main suited for a comforting meal.

Description

The souffle begins by thoroughly removing excess moisture from thawed spinach, which is then folded into a smooth mixture of butter, flour, and warm milk cooked into a béchamel sauce with nutmeg and seasoning. After cooling slightly, egg yolks are blended in. Separately, egg whites are whipped to stiff peaks and gently folded into the spinach mixture, incorporating air that creates the souffle’s characteristic rise and lightness.

Baking in a greased pan at a moderate temperature develops a browned, puffy crust while maintaining a soft interior. The nutmeg adds subtle warmth without overtaking the spinach’s flavor. The souffle's texture is delicate yet substantial enough to serve on its own or alongside proteins.

Advance preparation is possible by completing the initial mixture and folding steps ahead of baking, allowing for fresh oven time just before serving to achieve optimal puffiness. Timing and gentle folding are key to preserving volume.
