Description
This recipe involves cleaning 12 medium-sized mushrooms and removing their stems to create cavities. A small spoon or tomato huller clears out additional inner flesh to hold the filling. Each mushroom is then filled with salsa of choice—mild, medium, or hot—and topped with shredded cheddar cheese.
Baked in a 400°F oven for 15–20 minutes, the cheese melts and browns slightly, while the mushrooms cook tender but firm. The combination of spicy or mild salsa with melted cheese offers a contrast of textures and flavors.
Smaller to medium mushrooms are preferred as they best accommodate stuffing amount and cook evenly. The amount of salsa may be adjusted depending on mushroom size to avoid overflow.

- ⅓ cup salsa mild, medium, or hot
- ½ cup cheddar cheese or other cheese, shredded
Instructions
- Preheat oven to 400°F.
- Clean mushrooms thoroughly and remove stems.
- Using a tomato huller or small spoon, remove a little bit of the inside flesh of the mushroom.
- Fill mushrooms with Salsa and top with cheese.
- Bake 15-20 minutes or until cheese is golden.
