Easy Sweetcorn Fritters
Description
Easy Sweetcorn Fritters are made by combining whisked eggs with plain flour and baking powder to create a batter thick enough to hold sweetcorn kernels, chopped spring onions, and cilantro. This mixture is spooned into hot olive oil and fried for a few minutes on each side until golden and cooked through. The fritters develop a crisp surface while keeping a moist, tender inside featuring sweet bursts of corn and fresh herbs.
The recipe accommodates fresh, canned, or frozen sweetcorn, adapting to available pantry ingredients. The flour amount helps the fritters maintain their shape during frying. Optionally, a diced red chili can be added for spice, and wholewheat flour can be substituted for a different texture. A sprinkle of salt at serving enhances the flavors, though it can be omitted for children.

Ingredients
- 260 g sweetcorn
- 2 egg whisked
- 100 g plain flour
- 1 teaspoon baking powder
- 4 spring onion sliced, aka scallion
- 10 g cilantro finely chopped, fresh
- 1 tablespoon olive oil
Instructions
- Whisk 2 Eggs and then add 100 g Plain flour and 1 teaspoon Baking powder.
- Add 260 g Sweetcorn, 4 Spring onion (Scallion), and 10 g Fresh coriander (cilantro). Mix well.
- Heat 1 tablespoon Olive oil in a pan and add spoonfuls of the corn batter. Using two spoons, shape into rough circles around 10cm/4in in diameter. Fry for 2 minutes on each side.
Notes
- Use fresh, frozen or canned sweetcorn as preferred.
- The quantity of flour helps the fritters hold together well during frying.
- Add diced red chili to the batter for a spicy kick if desired.
- Plain flour can be swapped with wholewheat flour for a different texture.
- Sprinkle with a little salt upon serving to enhance flavor, omit for children.
