Easy Taco Chicken Salad

Ingredients

  • 1/2 cup yogurt plain, Greek
  • 1 tablespoon lime juice
  • 1 tablespoon taco seasoning
  • 1 clove garlic minced
  • 2 cups chicken shredded rotisserie
  • 1/2 cup red bell pepper diced
  • 1/2 cup yellow bell pepper diced
  • 1/3 cup red onion diced
  • 1/4 cup celery or jicama, diced
  • 1/4 cup cilantro chopped
  • 1 tablespoon jalapeño minced
  • salt to taste, Kosher salt
  • black pepper to taste, Kosher salt
  • avocado optional, garnish, extra
  • cilantro optional, garnish, extra

Instructions

  1. In a large bowl, whisk together the Greek yogurt, lime juice, taco seasoning, and garlic.
  2. Add the shredded chicken, peppers, onion, celery, cilantro, and jalapeño.
  3. Stir until well coated. Season with salt and pepper, to taste. Garnish with avocado and cilantro, if desired.
  4. Enjoy plain or eat in a lettuce wrap, tortilla, or with tortilla chips.

Notes

  • Store the salad in an airtight container in the fridge for up to 4 days.
