Easy Teriyaki Chicken
Description
The chicken is marinated in salt, sugar, and mirin to infuse seasoning and tenderize the meat before pan-frying. Cooking starts skin-side down to develop crispiness and caramelization. After cooking both sides, the chicken is cut into bite-size pieces and arranged for serving.
The teriyaki sauce is prepared separately by simmering soy sauce, mirin, honey, and water until slightly thickened, concentrating the sweet and salty balance. Drizzling the sauce over the chicken provides a glossy finish and rich flavor layer. Garnishes of toasted sesame seeds and thinly sliced green onions add texture and brightness.

Ingredients
- 2 pounds chicken thigh or chicken breast -about 4-5 pieces, boneless; with skin
- 2 teaspoons salt
- 2 teaspoons sugar
- 3 teaspoon mirin
- 2-3 tablespoons neutral cooking oil for frying, generic cooking oil
- 1 teaspoon sesame seeds - for garnishing
- 1 talk green onions - sliced thinly for garnishing
TERIYAKI SAUCE
- ¼ cup soy sauce
- ¼ cup mirin
- ¼ cup honey
- ¼ cup water
Instructions
- Combine chicken, salt, sugar, and mirin in a bowl and mix well. Cover and let it marinate for at least 30 minutes.
- While waiting, prepare the teriyaki sauce by combining all ingredients in a saucepan and bring to a simmer over medium heat. Let it cook until reduced by half and slightly thicker. Set aside.
- Heat oil in a frying pan over medium-high heat. Fry the chicken with the skin side first for 3-5 minutes or until golden and crispy. Then turn and do the same on the other side.
- Transfer chicken to a chopping board and cut into bite-size. Transfer to a serving dish and drizzle with teriyaki sauce. Finish with a sprinkle of sesame seeds on top and some green onions.
