Easy Teriyaki Chicken Casserole Recipe

This Easy Teriyaki Chicken Casserole combines shredded cooked chicken with cooked vegetables and rice, all coated in a thickened teriyaki sauce made from soy sauce, brown sugar, garlic, and ginger. The casserole is baked for a short time to meld flavors and warm through, yielding a saucy, savory rice dish.

Description

The casserole involves preparing a teriyaki sauce by simmering soy sauce, water, brown sugar, garlic, and ground ginger until combined. A cornstarch slurry is then added to this hot mixture to thicken it into a glossy sauce. Cooked shredded chicken, stir-fried or frozen cooked vegetables, and cooked rice are mixed together in a baking dish.

The thickened teriyaki sauce is poured over the chicken and vegetables, coating them evenly before baking in the oven for about 20 minutes. This brief bake warms the ingredients and allows the sauce to penetrate the mixture, binding the dish together.

Results are moist, saucy, and flavorful with tender chicken and soft vegetables resting on the rice base. The dish can be finished with an additional splash of soy sauce to adjust saltiness to taste just before serving.
