Easy Teriyaki Meatballs
Description
Easy Teriyaki Meatballs begin with mixing lean ground beef, panko breadcrumbs, minced dry onion, egg, milk, ground ginger, salt, and black pepper. Formed into small balls, they bake uncovered at 400°F for 20 to 25 minutes until fully cooked.
The accompanying teriyaki sauce is made on the stove by whisking cold water, packed light brown sugar, low-sodium soy sauce, garlic powder, cornstarch, and sesame oil. It’s cooked over medium heat until thickened and smooth, creating a sweet and savory glaze.
Once baked, the meatballs are coated in this home-cooked sauce and served over cooked rice for a straightforward meal with balanced texture—the tender meatballs and the thickened sauce.
Ingredients
- 2 pounds ground beef lean
- ⅔ cup panko bread crumbs
- 2 tablespoon onion dry, minced
- 1 large egg
- ¼ cup milk
- 1 ½ teaspoons ground ginger
- 2 teaspoons salt
- ¼ teaspoon black pepper ground
Teriyaki Sauce
- 1 ½ cup water cold
- ¾ cup light brown sugar packed
- ½ cup soy sauce low-sodium
- 1 teaspoon garlic powder
- 3 tablespoons cornstarch
- 1 teaspoon sesame oil
Instructions
- Preheat oven to 400 degrees Fahrenheit and spray a 9x13-inch baking pan with nonstick cooking spray.
- To a large bowl add the 2 pounds lean ground beef, ⅔ cup panko bread crumbs, 2 tablespoon dry minced onion, 1 large egg, ¼ cup milk, 1 ½ teaspoons ground ginger, 2 teaspoons salt, and ¼ teaspoon ground black pepper. Mix well to combine.
- Scoop the meat mixture out into 1 ½ tablespoon pieces and roll into balls, place them in the prepared baking dish. Bake uncovered for 20-25 minutes until the meatballs are cooked through.
Teriyaki Sauce
- In a medium saucepan, add the 1 ½ cup cold water, ¾ cup packed light brown sugar, ½ cup low-sodium soy sauce, 1 teaspoon garlic powder, 3 tablespoons cornstarch, and 1 teaspoon sesame oil.
- Whisk the sauce ingredients together and cook over medium heat, whisking occasionally until it thickens and no lumps remain.
- When meatballs are done baking, coat them in the teriyaki sauce and serve over cooked rice.
