Easy Thai Pineapple Fried Rice in 30 Minutes
Description
The recipe begins by preparing a sauce mixing fish sauce, oyster sauce, sugar, curry powder, and turmeric powder to provide a savory and mildly spiced base. Shallots, garlic, ginger paste, and optional Thai chili are stir-fried for aroma, then shrimp, green onions, and red peppers are added until the shrimp turn opaque. Cooked white rice and peas are incorporated next, and the prepared sauce is drizzled in to coat everything evenly.
Finally, fresh pineapple chunks are folded in and heated through, imparting their natural sweetness and a juicy texture that contrasts with the savory, spiced ingredients. Garnishing with chopped cilantro and optional pork floss enhances the dish’s traditional Thai flavor elements.
Serving the fried rice inside hollowed pineapple halves offers an attractive presentation suitable for casual meals or gatherings. This recipe showcases a balance of textures and flavors, with the tangy-sweet pineapple complementing the umami-rich sauce and tender shrimp.
You can use a whole pineapple by scooping out the fruit and reserving chunks for the dish. Adjust chili quantity for desired heat.
