Easy Tomato Basil Soup

Easy Tomato Basil Soup is thick, creamy, and full of tomato flavor. This family favorite soup is delicious on its own, and even better paired with a classic grilled cheese!

Ingredients

  • 1 tablespoon olive oil
  • 1 medium white onion diced, or yellow onion
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 large basil chopped, fresh leaves
  • 1/2 cup heavy cream
  • 2 (15 ounce cans) diced tomatoes fire roasted

Instructions

  1. Heat olive oil in a large saucepan over medium high heat. Add in the diced onion and saute for about 5 minutes until soft and translucent.
  2. Stir in garlic and cook 1 minute. Add in the chicken broth, diced tomatoes, salt, and pepper. Bring it to a boil and simmer for about 10 -15 minutes.
  3. Remove from heat. Add the fresh basil leaves, Use a handheld immersion blender to puree until smooth, or transfer to a blender to puree and return to the pot. If using a blender, be sure to vent the steam so pressure does not build.
  4. Stir in the heavy cream, taste, and add more salt and pepper if necessary. Serve hot.

Notes

  • Don't have fresh basil? You can replace the fresh basil with 1 teaspoon of dried basil.
