Easy Tomato Soup
Description
This Easy Tomato Soup starts by softening chopped onions in cooking oil and then incorporating plain flour to create a light thickening base. Fresh tomatoes or canned tomatoes with juice add body and tang, while tomato puree enhances the tomato flavor. Vegetable stock brings depth and a savory background to the soup as the ingredients simmer together.
The soup is then pureed to a smooth consistency, making it creamy without dairy. Its flavor combines natural sweetness and acidity from the tomatoes balanced by the starch from the flour and the mild sweetness from the onions. Additional water can be added for desired thickness.
Once blended, you can serve the soup simply or add fresh herbs and seeds as garnish to introduce texture and complementary flavors. This flexible recipe allows for a comforting tomato soup adaptable to available ingredients and personal tastes.
Using low salt stock can make it suitable for children, and there’s no need to peel tomatoes since they blend entirely. For a smoother texture, straining the soup after blending is an option.
Ingredients
- 1 tablespoon neutral cooking oil generic cooking oil
- 1 onion chopped
- 2 tablespoon plain flour (use gluten free flour if required)
- 10 tomatoes or 2 x 15oz/400g cans of tomatoes including the juice), roughly chopped, fresh, 750g
- 2 ¼ cups vegetable stock 500ml, or broth
- 2 tablespoon tomato puree or tomato paste
Instructions
- Heat the oil in a large pot over a medium heat. Add the onion and cook for 4 minutes until softened. Sprinkle in the flour and stir well.
- Add the tomatoes, stock and tomato puree, stir well then bring to the boil. Reduce the heat and simmer for 10 minutes.
- Puree with a hand held blender or food processor. Add more water to thin, if desired.
- Ladle the soup into bowls and serve. If desired, top with fresh herbs and seeds.
Notes
- Fresh tomatoes can be substituted with canned plum tomatoes including their juice for convenience.
- Strain the blended soup for an extra smooth texture if desired.
- Use low-salt vegetable stock to reduce sodium content, helpful when cooking for children.
- Peeling or skinning tomatoes is unnecessary as the soup is pureed.
