Easy Tomato Soup
Description
Easy Tomato Soup uses only tomato puree and chicken broth as its main liquids, seasoned thoughtfully with garlic granules, onion granules, paprika, cumin, salt, and black pepper to layer subtle warmth and depth. The soup simmers gently to develop flavor. A touch of sweetener can be added if desired to balance tomato acidity, depending on the brand used.
Once simmered, heavy cream is stirred in to add richness while keeping the soup smooth and velvety. The recipe directs against boiling after adding cream, preventing curdling. Serve hot for a classic tomato soup experience that combines bright tomato flavor with mild warming spices.
For best results, specific tomato puree brands with balanced sweetness are recommended, though a mild sweetener can adjust acidity for other brands. Leftovers store well refrigerated for up to four days and reheat gently in the microwave at half power with a cover to prevent splatters. Freezing is not advised due to the cream content.
Ingredients
- 28 ounces tomato puree just pureed tomatoes, no other ingredients, canned
- 2 cups chicken broth not low-sodium
- 1 teaspoon kosher salt or ½ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
- ½ teaspoon black pepper
- 1 teaspoon garlic granules or powder
- 1 teaspoon onion granules or powder
- 1 teaspoon paprika
- 1 teaspoon cumin ground
- 1 tablespoon sweetener optional - taste and decide
- ½ cup heavy cream
Instructions
- Whisk together the tomato puree, chicken broth, and seasonings (salt, pepper, garlic powder, onion powder, paprika, and ground cumin) in a large stockpot.
- Bring to a boil over high heat.
- Whisk again, reduce the heat to low, cover, and simmer for 20 minutes. Taste the soup and decide if you’d like to add more salt or a small amount of sweetener.
- Stir in the heavy cream and continue cooking, uncovered, over low heat just until heated through, 1-2 more minutes. Do not allow the soup to boil.
- Serve immediately.
Notes
- Use Cento or Pomi tomato puree for sweeter, less acidic soup; if using American brands, add a small sweetener to balance acidity.
- Substitute full-fat, unsweetened canned coconut milk for heavy cream if desired.
- Store leftovers in an airtight container in the fridge up to four days and reheat covered at 50% power to avoid splatters.
- Avoid freezing the soup due to cream content affecting texture.
