Description
Easy Tuscan roast chicken combines fresh rosemary, garlic, and lemon zest to create a fragrant rub that is applied under the skin and on the surface of a whole free-range chicken. Roasting the bird with quartered onions, whole garlic cloves, and extra rosemary sprigs, while braising it in white wine and chicken stock, ensures the meat remains moist and fragrant. The initial low roasting temperature allows the chicken to cook evenly, and finishing at high heat crisps the skin to a golden brown.
The resulting chicken provides a balanced flavor profile of citrus brightness, herbal notes, and subtle garlic. The texture contrasts between tender meat inside and a crisp skin outside. This preparation works well as a main course paired with roasted vegetables, potatoes, or a fresh salad.
Allowing the chicken to rest for 10-15 minutes after roasting helps the juices redistribute, making for juicier servings when carved. Using fresh ingredients in the rub and including lemon in the cavity enhances the depth of flavor throughout the bird.
Ingredients
- 1 chicken free range/organic, 1.8-2kg
- 2 onion quartered
- 8 garlic cloves
- 1 cup white wine
- 1 cup chicken stock
- rosemary fresh
for the rub
- 2 rosemary sprigs, fresh
- 2 garlic cloves
- lemon reserve lemon, zest and juice of 1
- salt to taste
- black pepper to taste
- 4-5 tablespoons olive oil
Instructions
- Pre-heat the oven to 200ºc.
- To make the rub, finely chop the rosemary and garlic then mix with the lemon zest and juice, salt, pepper and olive oil.
- Rub the mixture over the chicken, loosening the skin gently and pushing some of the rub under the skin.
- Place the reserved lemon in the cavity of the chicken then place the chicken in a oven-proof dish.
- Add the onions, garlic cloves and extra rosemary then pour in the wine and chicken stock.
- Place the chicken in the oven and immediately turn the temperature down to 160°c.
- Allow to roast for 45 minutes until almost cooked through then turn the heat up to 220° to allow the skin to crisp up.
- When the chicken is golden brown and cooked through, remove from the oven and allow to rest for 10-15 minutes before carving and serving.
