Ingredients

Servings
  • 2 cups pineapple chunks peeled, cored and cut into chunks (or 300g/ 1 pineapple)
  • ¾ cup light brown sugar lightly packed, 100g
  • ½ cup pineapple juice or water, 115ml
  • 1 tablespoon lime juice or lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark rum optional
  • 1 tablespoon cornflour cornstarch

Instructions

  1. Add the sugar, pineapple juice or water and lime juice to a saucepan and bring to a boil over a medium/low heat.
  2. Reduce the heat, add the pineapple chunks and simmer for 15 minutes to reduce slightly. 
  3. Dissolve the cornflour/cornstarch in 1 tablespoon of water and stir it in. Return to the stove and heat for 1 minute. 
  4. Stir in the vanilla and rum (if using). Allow to cool (it will thicken further as it cools).
