Description
Easy Vanilla Pineapple Compote combines pineapple chunks cooked gently in a syrup of brown sugar, lime juice, and pineapple juice. As the mixture simmers, it reduces slightly to concentrate the fruit's natural sweetness while the vanilla extract adds a mild aromatic depth. Cornstarch stirred in near the end acts as a thickening agent, giving the compote a smooth, slightly thickened consistency upon cooling. The optional dark rum contributes a subtle warmth and complexity to the flavor profile.
This compote can be served warm or cold atop desserts, pancakes, yogurt, or ice cream, adding a fresh fruity contrast. It can also pair well as a condiment with savory dishes that benefit from a sweet and tangy touch.
Ingredients
- 2 cups pineapple chunks peeled, cored and cut into chunks (or 300g/ 1 pineapple)
- ¾ cup light brown sugar lightly packed, 100g
- ½ cup pineapple juice or water, 115ml
- 1 tablespoon lime juice or lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons dark rum optional
- 1 tablespoon cornflour cornstarch
Instructions
- Add the sugar, pineapple juice or water and lime juice to a saucepan and bring to a boil over a medium/low heat.
- Reduce the heat, add the pineapple chunks and simmer for 15 minutes to reduce slightly.
- Dissolve the cornflour/cornstarch in 1 tablespoon of water and stir it in. Return to the stove and heat for 1 minute.
- Stir in the vanilla and rum (if using). Allow to cool (it will thicken further as it cools).
