Easy Vegan Apple Muffins

These Easy Vegan Apple Muffins combine grated apples with cinnamon and optional raisins or walnuts for texture and sweetness. The batter uses applesauce and oil as moistening agents, resulting in tender muffins with a lightly spiced apple flavor. Baking at 350°F yields a soft crumb that holds together well despite the lack of eggs. They can be a versatile breakfast or snack option, especially when you want a plant-based treat with subtle fruit and spice notes.

Description

Easy Vegan Apple Muffins feature grated Honeycrisp apples blended into a mix of applesauce, vegetable oil, sugar, vanilla, and flour enriched with cinnamon and baking powder. The optional raisins or walnuts add chewiness and crunch to the tender muffin crumb. Baking at 350 degrees F until a toothpick comes out clean ensures a moist yet structured muffin dough that is egg-free. The apple shreds provide noticeable texture and bursts of fruity sweetness throughout the soft muffin.

This recipe suits a breakfast, snack, or lunchbox baked good. The natural sweetness and mild spice balance well with coffee or tea. The lack of eggs and dairy makes it approachable for vegan diets without sacrificing familiar texture.

To avoid dense muffins, it is important to measure flour correctly by fluffing and leveling and not to overmix the batter; some lumps are acceptable. For more texture variety, a mix of shredded and diced apples can be used. Baking time ranges from 25 to 30 minutes depending on oven and muffin size.

Ingredients

Servings
  • ¼ cup applesauce
  • ½ cup vegetable oil
  • ¾ cup sugar
  • 1 cup apple I used Honeycrisp, grated
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • ¼ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ cup raisins optional, or vegan chocolate chips
  • ½ cup walnuts optional, chopped

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, mix together the applesauce, oil, sugar, apples, and vanilla in a bowl. Then add the flour, salt, baking powder, cinnamon, raisins or vegan chocolate chips (if using), and walnuts (if using), and whisk until thoroughly combined.
  3. Pour the batter into a greased muffin pan and bake for 25 to 30 minutes, or until a toothpick comes out clean.

Notes

  • Measure flour by fluffing and leveling to prevent dense muffins caused by compacted flour.
  • Mix the batter just until combined; lumps are fine to keep muffins tender and light.
  • For varied apple texture, combine shredded and diced apples about 1/4-inch cubes.
