Easy Vegan Mushroom Burgers

These Easy Vegan Mushroom Burgers combine cooked lentils and cremini mushrooms with walnuts, oats, and breadcrumbs to form flavorful, textured patties. Ground flaxseed serves as a binder, while mustard, smoked paprika, and maple syrup provide depth of flavor. The resulting burgers are shaped to pan-fry or grill, making them a satisfying plant-based alternative for burger lovers.

Description

The recipe starts by preparing a flaxseed "egg" with ground flaxseed and water to bind ingredients. Lentils and cremini mushrooms are blended with walnuts, oats, mustard, smoked paprika, maple syrup, salt, and pepper, creating a coarse mixture with a complex, earthy taste. The blitzed mixture is combined with breadcrumbs, chopped onion, and the flax binder, producing a sticky consistency suitable for shaping into burger patties.

These patties can be cooked by frying or grilling, developing a firm exterior while maintaining moisture inside due to lentils and mushrooms. The seasoning balances savory, smoky, and slightly sweet notes, while walnuts add texture and richness. As vegan patties, they provide a wholesome option suitable for plant-based meals.

The burgers can be stored in an airtight container in the refrigerator to cook later or frozen directly and cooked from frozen, allowing for convenient meal planning.
