Easy Vegetable Soup

This easy vegetable soup is full of healthy, simple ingredients but still packed with delicious flavor. Ready in under 30 minutes, it's a hearty healthy meal - quick!

Ingredients

  • 3 tablespoons butter
  • ½ cup onion diced
  • ½ cup carrot diced
  • ½ cup celery diced
  • 1 teaspoon parsley
  • ½ teaspoon basil
  • ¼ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups vegetable broth
  • ½ cup pea frozen
  • ½ cup corn frozen or canned
  • 1 can diced tomatoes 15 ounces, NOT drained
  • 1 can White beans 15 ounces, drained and rinsed
  • Parmesan Cheese optional, for serving

Instructions

  1. In a large pot, melt butter over medium heat. 
  2. Add onions, carrots, and celery. Cook until softened and translucent about 5 minutes.  
  3. Add herbs, salt, and pepper. Cook for an additional 1-2 minutes. 
  4. Add broth, peas, corn, tomatoes, and white beans. 
  5. Bring to a boil, then reduce to a simmer and simmer until veggies are soft, about 15 minutes. 
  6. Taste before serving and adjust seasonings. Serve with grated parmesan cheese, if desired.
