Easy Watermelon Popsicles

  • 6 cups fresh watermelon chunks
  • 3 tablespoons granulated low carb sweetener (optional)
  • 3 tablespoons fresh lime juice
  • Dash of Salt

Instructions

  1. Combine watermelon, lime juice, and sweetener (if using) in a blender.
  2. Pulse a few times before moving to a full blend, then blend until a smooth puree consistency is achieved.
  3. Pour the puree into the popsicle molds.
  4. Freeze for at least 5 hours or overnight before removing from molds.

  • Sweetener Options: You can use no sweetener at all, or whatever one you would like. This recipe is super forgiving.
  • VARIATIONS
  • Creamy Watermelon Popsicles: Add 1 cup of yogurt or canned or homemade coconut milk to turn these into creamy watermelon popsicles.
  • Lemonade Watermelon Popsicles: Squeeze some fresh lemon juice into the mixture for a delicious watermelon lemonade popsicle. Just be sure to taste and add more sweetener if necessary so the popsicles don’t turn out too sour.
  • Strawberry Watermelon Popsicles: Substitute 1 cup of strawberries for 1 cup of the watermelon.
  • Mint Watermelon Popsicles: Add 1-3 tablespoons fresh mint to the watermelon before blending.
  • Cucumber Watermelon Popsicles: Add 1-2 cups chopped cucumber to the watermelon. Depending on the size of your popsicles molds, and your taste, you can feel free to leave out the same amount of watermelon as desired.
  • Looks like a Watermelon Popsicles: For a really fun watermelon popsicle that looks like a watermelon, leave some space in the popsicle molds, then layer some lightly sweetened coconut yogurt and then pureed kiwi on top of the watermelon puree. If desired, stir some sugar-free chocolate chips into the watermelon puree before adding it to the molds.
