  • 2 tablespoons olive oil
  • 4 garlic minced, cloves
  • pinch crushed red pepper
  • 1 puff pastry thawed if frozen, sheet
  • 2 Roma tomato thinly sliced, or beefsteak tomato
  • salt kosher salt
  • black pepper kosher salt
  • 8 ounces provolone cheese or an italian blend, freshly grated, or mozzarella cheese
  • 2 ounces Parmesan Cheese plus more for sprinkling, freshly grated
  • ½ teaspoon basil dried

Instructions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper and place the sheet of puff pastry on top. Poke it all over with a fork (this prevents big bubbles!)
  2. Heat the olive oil in a skillet over low heat. Stir in the garlic cloves and a pinch of crushed red pepper. Cook for 1 to 2 minutes, until the garlic is sizzling. Let it cool slightly.
  3. While it’s cooling, slice the tomatoes. Place the slices on a paper towel and sprinkle all over with salt. Let sit for 10 minutes, then pat dry with a paper towel.
  4. Brush the puff pastry all over with the garlic oil. Sprinkle all over with the cheese, leaving a 1-inch border around the edges. Top with the tomato slices. Sprinkle on some pepper and the dried basil. Drizzle a bit more garlic oil on (just a bit!) and sprinkle with more parmesan.
  5. Bake for 20 to 25 minutes, until golden and puffed and cheesy! Remove from the oven and let cool for 5 minutes. Sprinkle with parmesan, slice and serve!
