  • 1 large zucchini
  • ½ tablespoon olive oil
  • 2 tablespoons cream cheese plain or herb & garlic flavor, spreadable
  • teaspoon garlic powder
  • salt to taste
  • black pepper to taste
  • 1 tablespoon Parmesan Cheese plus additional for garnish, shredded
  • parsley for garnish, optional, chopped, fresh

Instructions

  1. Cut the ends of the zucchini and spiralize using the medium noodle blade (not the smallest noodle).
  2. Preheat olive oil over medium high heat. Add zucchini noodles and garlic powder (no salt). Cook 3-5 minutes, stirring tongs until slightly softened/wilted.
  3. Move noodles to one side and add cream cheese, stirring until melted.  Toss with zoodles and season with salt and pepper to taste.
  4. Stir in grated parmesan cheese. Garnish and serve.

Notes

  • Do not add salt before or during cooking to prevent watery, soggy noodles.
  • Use a medium spiralizer blade for the best noodle size and texture.
  • Cook zoodles just until slightly softened to retain some bite and avoid mushiness.
