Easy Zucchini Fritters

Easy Zucchini Fritters consist of matchstick-cut zucchini combined with flour, egg, milk, Parmesan cheese, baking powder, salt, and pepper, fried until golden and crisp. Unlike grated zucchini, the matchstick texture provides a firmer, crispier fritter with distinct vegetable strands. Served hot, these fritters pair well with Thai sweet chili sauce for a sweet and spicy contrast.

Description

The recipe calls for slicing zucchini into matchstick strips rather than grating, which prevents sogginess and promotes a better texture. The zucchini is mixed with binding ingredients including all-purpose flour, egg, milk, Parmesan cheese, baking powder, salt, and black pepper to form a mixture that holds together softly but isn't wet. Cooking in hot oil until golden brown creates fritters with a crispy exterior and cooked-through interiors that retain some vegetable texture.

The fritters are removed with a strainer and drained on paper towels to preserve crispness. Serving them with Thai sweet chili sauce offers a complementary balance of sweetness and mild heat, enhancing the fritters without overpowering them. This dish works well as a snack, appetizer, or side.

Ingredients

Servings
  • neutral cooking oil for frying, generic cooking oil
  • 8 oz (230g) zucchini cut into matchstick strips
  • 5 tablespoons all-purpose flour
  • 1 egg large
  • 3 tablespoons milk
  • 1/4 cup Parmesan Cheese shredded
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 dashes black pepper ground
  • Thai sweet chili sauce

Instructions

  1. Trim the top of the zucchini and cut it into matchstick strips. Avoid grating the zucchini, as this will result in fritters that are not crispy and lack a good texture.
  2. Heat the oil in a large frying pan over medium-high heat until shimmering.
  3. In a large bowl, mix the zucchini, flour, egg, milk, cheese, baking powder, salt, and pepper. Stir until well combined. The mixture should barely hold together and should not be wet or watery.
  4. Using a spoon, scoop up the zucchini mixture and gently drop it into the hot oil. Fry in batches until both sides are golden brown and the insides are cooked through. Remove the fritters from the oil using a strainer and transfer them to a plate lined with paper towels. Serve hot with Thai sweet chili sauce.
